How to Grow Alfalfa Sprouts at Home in a Mason Jar
Alfalfa is the sprout most people picture when they hear the word. Long white stems, tiny green tops, piled on a sandwich. It is also the cheapest and highest yielding crop we have grown in a jar so far. Two tablespoons of seed, a 32 oz mason jar, and five days of rinsing gave us 202 grams of fresh alfalfa sprouts for 77 cents. No soil, no grow medium, no tray, no rack.
This is our full jar method for alfalfa, start to finish, including the thing nobody warns you about the first time: alfalfa turns the rinse water yellow, and that yellow stains anything white it sits against.

Alfalfa Sprouts Are Not Alfalfa Microgreens
Sprouts are grown in water only, with no medium at all, and you eat the entire thing: seed, root, and shoot. They finish in 2 to 7 days. Microgreens are grown on a medium like soil, coco coir, or a reusable silicone grow medium, take 6 to 21 days, and get cut above the medium so the roots and hulls stay behind.

What You Need
- A 32 oz wide mouth mason jar with a sprouting lid and a stand. We use this jar set with the stand, which holds the jar mouth down at an angle so water actually leaves the jar instead of pooling in the bottom
- Alfalfa sprouting seed. The seed we used for this batch is Nature Jim's organic alfalfa sprouting seed. True Leaf Market carries alfalfa sprouting seed as well
- A blackout sleeve or anything that blocks light. A kitchen towel, a clean sock, or a paper bag over the jar works
- A salad spinner. This is the piece people skip and then wonder why their sprouts turn to slime by day three. This is the spinner we use
- A light source for the last few hours, which can be a window or a grow light. We use these LED lights because greening happens faster under them in our house than it does on a windowsill

Buy Seed Labeled for Sprouting, Not Field Seed
This is the one rule with no flexibility, and alfalfa is the crop where it gets broken most often. Alfalfa is a major forage and cover crop, so bags of alfalfa seed sit on shelves at feed stores and in garden centers everywhere, sold for pasture, hay, and food plots. That seed is frequently coated with fungicide or a rhizobium inoculant, and none of it is tested for the pathogens that matter in a jar you are going to eat out of raw.
Sprouting seed should be specifically labeled and tested for sprouting and bought from a reputable supplier. Garden seed, bulk food-grade seed, bird seed, and field seed are all off the table. The seed itself is the usual source of contamination in a sprout batch, not the jar and not the water. Step by Step: Our 5 Day Alfalfa Jar Routine
Day 0: Measure and Soak
Two tablespoons of alfalfa seed goes into a clean 32 oz jar. That is roughly 20 grams. Fill the jar about halfway with cool water, put the sprouting lid on, and let it soak 8 hours or overnight.
Most suppliers list 1 to 2 tablespoons for a quart jar, and there is a reason for that spread. Alfalfa seed is tiny and it expands enormously, more than most people expect. Two tablespoons filled our jar completely by day 5, to the point that the sprouts were pressing against the lid. If your drainage has been marginal, or if this is your first alfalfa batch, start with one tablespoon and work up. Under-fill rather than over-fill. An over-packed jar is the fastest way to get poor drainage, hot spots, and a batch you have to throw away.
After the soak, drain the water off completely. Then rinse once more with fresh water and drain again. Now the jar goes mouth down at an angle on the stand, with the blackout sleeve over it.
Days 1 through 4: Rinse, Drain, Repeat
Rinse and drain 2 to 3 times per day. Fill the jar partway, swirl the seed around so every surface gets wet, then pour the water out and set the jar back on the stand at an angle.
Drain thoroughly every time. Standing water in the bottom of the jar is the single most common cause of a failed or unsafe batch. Give it a shake mouth-down over the sink before it goes back on the stand.
Somewhere around day 3 you will see a fine white halo on the roots. Those are root hairs, not mold. Root hairs are fine rather than fuzzy, bright white, spread evenly across the whole batch, and they collapse and disappear the moment you rinse. Mold is gray or black, coarser, patchy rather than even, does not rinse away, and smells wrong. The same identification logic we use in our microgreens and mold guide applies in the jar.
Day 5: Green Them Up
On day 5 the sleeve comes off. Put the jar somewhere with light, either a bright window or under a grow light, and give it a few hours. The pale yellow leaves turn green as chlorophyll develops.
Alfalfa greens up fast and evenly, faster than the brassicas do, so keep an eye on it. A few hours is plenty. This is not a full light cycle like you would give a microgreen tray. Keep rinsing on schedule through the greening period.
Harvest: Get the Hulls Out
Empty the whole jar into a salad spinner basket. Fill the bowl with cool water, agitate the sprouts with your hand, and let the loose hulls float or sink away from the mass. Pour off, refill, and repeat until almost no hulls remain.
Alfalfa comes out of the jar as a single dense tangled mat, and that mat traps hulls inside it. Break it apart with your fingers in the water rather than swirling the whole clump around, or you will pour off clean water three times and still find hulls in the middle of it. The hulls themselves are tiny green and tan flecks that are easy to miss.
You will not get every last one, and that is fine. Getting most of them out is what matters. Hulls are the first thing in the batch to break down, they hold moisture against the sprouts, and decaying plant material is exactly what bacteria want. Once the hulls are mostly gone, lift the basket, dump the water, and spin until most of the moisture is off. Spin, check, dump the water out of the bowl, and spin again if they still feel wet.

Alfalfa Turns the Rinse Water Yellow, and It Stains
This catches everybody the first time. Pour the soak water off a jar of alfalfa and it comes out yellow, sometimes closer to yellow-brown. The next few rinses do the same thing before it starts running clear.
That color is pigment leaching out of the seed coat, and it is normal. It is not mold, it is not rot, and it is not a sign that anything has gone wrong. The seed is simply giving up some of its color the way a tea bag does. Fenugreek does the same thing, and does it harder.
The part worth planning around is that the yellow stains. We have permanently discolored white sprouting trays with both alfalfa and fenugreek, and once it sets in, it does not come out. Scrubbing does not fix it, and soaking does not fix it. The trays still work fine, they just look stained forever.
A few things that help:
- Glass jars are the easy answer. Glass rinses clean every time. This is one more small reason we default to the jar method for alfalfa
- Watch your white plastic. White lids, white spinner baskets, white bowls, and white sprouting trays are all candidates. Clear, colored, or stainless equipment will not show it
- Rinse equipment immediately after harvest rather than letting a yellow film sit and dry on it. Same goes for the sink and the counter
- Do not let the yellow water sit in the jar. This is just good drainage practice anyway, but standing pigment-heavy water is worse than standing clear water
One honest distinction: yellow water in the first day or two is pigment. Cloudy, gray, foamy, or sour smelling water at any point is a drainage problem, and that is a completely different conversation. Color alone is not a warning sign. Smell always is.

Why We Keep the Jar in a Blackout Sleeve
The sleeve stays on from the end of the soak until the morning of day 5. It is the step people skip most often, because alfalfa will technically sprout on a sunny windowsill, and then they wonder why their batch looks nothing like the sprouts on a deli sandwich. Four things are happening under that cover.
It gives you longer, more tender sprouts
A seed in the dark puts its energy into stem extension because it is searching for light. That is the same principle behind the blackout phase we use on a microgreen tray, applied to a jar instead. You get long white shoots with a small pale leaf on top. Grow the same alfalfa seed in light the whole way and the plant stops stretching early, so you finish with short stubby sprouts, oversized leaves, and noticeably less volume in the jar.
This matters more with alfalfa than with almost any other crop, because with alfalfa the stem is the product. The long white sandwich sprout everybody pictures is a sprout that spent its whole grow in the dark.
It keeps the flavor mild
Light drives chlorophyll production, and chlorophyll brings a stronger green, grassy flavor with it. Alfalfa is a mild crop to begin with, and a few hours of light at the end gives you the color without pushing it toward tasting like a lawn. Some crops go further than grassy and turn genuinely bitter in light. Fenugreek is the classic example, and mustard and radish both sharpen up considerably.
It keeps algae off the glass
A glass jar that is wet, warm, and sitting in daylight for five days is a decent place to grow algae. You will see it as a green film on the inside of the glass and on the hulls at the bottom. It is not dangerous on its own, but it is one more thing breaking down inside a jar you are about to eat out of, and covering the jar prevents it entirely.
It keeps the temperature steadier
Direct sun through glass heats the jar fast, and a warm wet jar with limited airflow is the exact environment we spend the whole grow trying to avoid. The sleeve blocks that. Ours sit on the counter at normal room temperature, out of direct sun, with the sleeve on and the mouth angled down to drain.
Anything opaque works. A purpose made sleeve, a clean sock pulled over the jar, a kitchen towel draped over the stand, or a paper bag. There is no advantage to buying something special for this.

Storage and Shelf Life
Sprouts go in the fridge dry, not wet. We put ours in a lidded container with a paper towel or a piece of cotton cloth in the bottom to absorb the moisture they keep giving off, then into the crisper drawer.
Swap that paper towel or cloth out often. If it feels damp, it is no longer doing its job and it is now holding water against the sprouts. Most alfalfa sprouts keep about a week handled this way. Because alfalfa comes out as a dense mat, loosen it up a little before it goes in the container so air can move through it instead of getting trapped in the middle.
If a batch ever smells musty, fishy, or sour, or you find fuzzy gray or black growth in it, throw the whole thing out. Do not rinse and rescue. Do not pick around it. When in doubt, throw the batch out.

What One Jar Actually Produced
Here is what our batch came out to:
- Seed used: 2 tablespoons, about 20 grams
- Jar: single 32 oz wide mouth
- Time: 8 hour soak plus 5 days
- Yield: 202 grams of fresh sprouts, a little over 7 ounces
- Seed cost: $0.77
That works out to around a dollar seventy five a pound, and it is the best return we have gotten out of a jar so far. For comparison, the salad mix batch we grew the same way produced 175 grams for 78 cents, and the broccoli batch produced 129 grams for $1.48. Same seed weight, same jar, same routine. Alfalfa yielded the most, cost the least, and finished a day sooner.
Your yield will shift with your seed lot, your soak time, and your kitchen temperature, but the ballpark holds.
Why Some People Use Hydrogen Peroxide When They Soak
This question comes up on every sprouting crop, so here is the honest version.
The reasoning behind it is seed surface sanitizing. Hydrogen peroxide breaks down into water and oxygen, it is easy to buy, and home sprouters use it to knock down organisms sitting on the outside of the seed coat before a warm, wet, five day environment gives them a chance to multiply. Some growers also believe it nudges germination along on older seed.
The common home method: cover the seed with 3% food-grade hydrogen peroxide straight from the bottle, stir once or twice, and let it sit for 3 to 5 minutes, then rinse thoroughly under running water before starting the normal soak. A more diluted version some people use is roughly 1 tablespoon of 3% peroxide per cup of water for the soak itself. Do not leave seed sitting in peroxide for long stretches. Extended exposure and higher concentrations can damage the seed coat and hurt germination rather than help it.
What it does not do: it does not sterilize the seed. Contamination can be internalized in the seed, where no surface rinse reaches it. For commercial sprout operations, FDA guidance points to an approved seed treatment such as 20,000 ppm calcium hypochlorite, and even that treatment is not considered capable of fully eliminating pathogens without hurting germination. A home peroxide dip is not equivalent to that, and it is never a substitute for buying seed that was tested for sprouting in the first place.
Our routine above is a plain cool water soak. If you want to add the peroxide step, use the method described here and treat it as one more small layer, not as a safety net.
Food Safety: The Part Worth Reading Twice
Raw sprouts have been linked to food borne illness outbreaks, and the reason is structural rather than sloppy technique. Warm, humid, low airflow conditions are what sprouts need and also what bacteria need. Growing them yourself removes some supply chain risk. It does not remove seed-borne risk.
Alfalfa deserves a specific mention here. It is the sprout most frequently named in Salmonella and E. coli outbreaks in the United States, which is exactly why federal food safety guidance calls it out by name. That is not a reason to avoid growing it. It is a reason to take the practices below seriously rather than treating them as optional.
- Use seed specifically labeled and tested for sprouting
- Sanitize jars and lids between batches. Extension guidance is roughly three quarters of a cup of unscented bleach per gallon of water, rinsed well afterward
- Rinse 2 to 3 times daily and drain completely every time
- Wash your hands before handling the jar or the harvest
- Get the hulls out and dry the sprouts before they go in the fridge
- Refrigerate promptly and eat within about a week
- Throw out any batch that smells wrong or shows fuzzy gray or black mold
Who should not eat raw sprouts at all: children, older adults, pregnant people, and anyone with a weakened immune system, including people undergoing cancer treatment, people with HIV or AIDS, and people with diabetes. Federal food safety guidance is that these groups should avoid raw sprouts entirely, including alfalfa, clover, radish, and mung bean, and eat them only if thoroughly cooked. That is not a softened recommendation and we are not going to soften it here. If you are in one of those groups and you want a fresh raw green, microgreens are the safer of the two crops, but that is a conversation to have with your own healthcare provider rather than a green light from us.
One More Thing Worth Knowing About Alfalfa
Alfalfa seeds and sprouts contain L-canavanine, a non-protein amino acid that closely resembles arginine. Research going back to the 1980s linked heavy alfalfa sprout consumption to lupus-like autoimmune activity in primates, and there are case reports in people as well. The Johns Hopkins Lupus Center advises that people with lupus or similar autoimmune conditions avoid alfalfa sprouts completely, and the Lupus Foundation of America gives similar guidance.
For most people this is not a factor, and alfalfa has been eaten as a sprout for decades. But it is specific to this crop, it does not apply to broccoli or radish or a salad blend without alfalfa in it, and it is the kind of thing that belongs in a grow guide rather than buried in a footnote somewhere. If you have an autoimmune condition, talk to your own healthcare provider before adding alfalfa sprouts to your routine. What Alfalfa Sprouts Taste Like and How to Eat Them
Alfalfa is the mildest sprout we grow. Fresh, faintly grassy, a little nutty, with essentially no heat behind it. If you have handed someone a radish sprout and watched their face change, alfalfa is the opposite experience. It is the one to give a kid, and the one to put on a sandwich for somebody who says they do not like sprouts.
That mildness is also why it works so well next to something with more personality. Our favorite use is alfalfa piled on a sandwich alongside radish microgreens, where the alfalfa brings the volume and crunch and the radish brings the bite. A jar of alfalfa tossed with a bowl of sunflower and broccoli microgreens makes a full salad for almost no money.

They also go on just about everything else:
- Piled on sandwiches and wraps in place of lettuce, where they hold their crunch better
- On avocado toast with flaky salt
- Folded into egg salad, tuna salad, or chicken salad
- Over grain bowls, rice bowls, and ramen, added at the very end
- In spring rolls alongside herbs and vermicelli
- Stirred into soup after it comes off the heat
- Blended into a smoothie, where the flavor disappears completely

Quick Troubleshooting
- Yellow rinse water. Normal for alfalfa, especially in the first day or two. Pigment leaching from the seed coat, not a problem
- Slimy or sour smelling batch. Almost always drainage. Drain harder, angle the jar more steeply, and cut the seed amount next time
- Jar packed so tight it will not drain. Alfalfa expands more than people expect. Drop to one tablespoon per quart jar
- Nothing sprouting. Check the seed lot. If germination looks under about 70 percent, replace it
- Slow growth. Below roughly 65F, add a day or two to the timeline
- Short stubby sprouts with big leaves. Too much light too early. Keep the sleeve on until day 5
- Grassy or strong flavor. Usually too much light, or too long in the jar past day 5 or 6
- White fuzz around day 3. Almost certainly root hairs. Rinse and look again
- Green film on the glass. Algae from light hitting a wet jar. Cover the jar and sanitize it before the next batch
- Hulls stuck in the middle. Break the mat apart with your fingers in the spinner bowl instead of swirling it whole
