Here in Texas, you can find locally grown microgreens in many restaurant dishes, either as garnishes or key ingredients mentioned on the menus for particular dishes. Whats wonderful too, is it's becoming more common to see them in local restaurants and coffee shops, instead of solely in high-end places. Could you imagine if fast-food chains replaced lettuce with microgreens?
Applications in Cooking: In salads, a fresh mix of microgreens, such as arugula, radish, and pea shoots adds a delightful crunch and spice. Mustard and Kale microgreens can be blended with other ingredients to create a salad dressing, like our Smokey Wild Blueberry Vinaigrette. Soups garnished with broccoli and kale microgreens gain a fresh, nutritious boost, or try something new and incorporate Pea Microgreens into a Beef Stew. Sandwiches and wraps benefit from the addition of basil and sunflower microgreens, which can elevate both flavor and health benefits. We personally have always been primarily indoor-growers ourselves and have been teaching people how to grow Indoor Hydroponic Microgreens since 2019, and selling products to help you grow primarily indoors since 2023.

Given their versatility, perhaps we'll even see more smoothie places incorporating them, instead of primarily relying on wheatgrass as the "living" supplement available on the shelves and ready for consumption in the form of Wheatgrass Shots. In our opinion, Microgreens truly embody the intersection of culinary innovation, health consciousness, and sustainable living, making them a trend that's here to stay.

Some of our customers and followers grow Microgreens for our warm bloodied friends, like @dolces_legacy who is a Certified Holistic Clinical Pet Nutritionist and grows particular microgreen varieties that they incorporate into their pet products to help give a nutrition boost for cats and dogs with cancer, as well as other needs. Alex Fasulo of @houseofgreenssaratoga plans to grow Microgreens for their rabbits that they've rescued!
Then we have some of our customers and followers who grow them for our cold blooded friends. For instance we talked with Wallito from @PennGrows who say's they use various types of microgreens for Bearded Dragons, highlighting micro kale for its vitamin A, C, and K content, and said it should be given in moderation due to oxalate levels. The Also Mentioned that Bearded Dragons enjoy broccoli microgreens and radishes microgreens, which are rich in vitamins A, B, C, E, and K, and provide essential minerals like iron, calcium, magnesium, potassium, and zinc. In fact, they said that the same microgreens grown for humans are often used for bearded dragons, including arugula. Or @iindianstartortoisee who occasionally feeds Franklin & Nezuko, the Indian Star Tortoise duo Sunflower Microgreens!

Starting a Microgreens Business

Cost-Effective Production: Microgreens require minimal equipment and space, making the initial investment relatively low, depending on your startup. Their fast growth cycle allows for frequent harvests, providing a quick return on investment. This makes microgreens an attractive option for aspiring entrepreneurs looking to start a small-scale farming business. Not only can microgreens be grown indoors on a windowsill, but they can also be grown abundantly in a small space. For instance, we grew in a 160 sq-ft space for 3 years. In that space, we could grow well over 144 10x20 trays (6 grow racks with 24 trays each) at a time. Depending on the variety and grow method, if we only grew broccoli microgreens and met our average harvest weight per tray, that’s roughly 110 pounds of broccoli microgreens per 11 to 16 days.
Scalability: Microgreens businesses can start small and scale up as demand increases. Entrepreneurs can begin with a home-based operation using basic equipment and a small growing area. As the business grows, you can upgrade your trays and equipment, and then expand operations by increasing production capacity or growing different varieties of microgreens. This scalability allows entrepreneurs to adapt to market demands and grow their businesses sustainably.
Business Models: Various business models can be explored in the microgreens industry. Home-based operations are a popular starting point, allowing entrepreneurs to produce microgreens with minimal overhead costs. Additionally, partnerships with local restaurants and grocery stores can provide a steady demand for fresh microgreens.
Sustainable Agriculture

Environmental Benefits:

**For instance, our primary method of growing microgreens lately has been using the hydroponic Kratky Method. When using this method for crops like broccoli or cabbage, we start off by misting the seeds with water during the first 3 to 4 days. After that, we know that 14 cups of nutrient water in the bottom reservoir will last us 8 to 10 days of self-watering per 10x20 tray, which produces around 300 to 400 grams of microgreens by harvest day. With this math in mind, if we are growing 144 10x20 trays (6 large grow racks with 24 trays each) every 2 weeks, we know that we are using about 65 gallons of water per week.
In comparison, growing mature broccoli or cabbage requires significantly more water and time. Mature plants need about 20-25 gallons of water per square foot over a growing season of about 85-100 days, yielding around 1 pound (454 grams) per square foot. With microgreens, we can produce 300-400 grams per tray in just 11-16 days, using much less water. This highlights the efficiency of microgreens: we get a higher yield in a shorter time with less water compared to growing mature crops.**
Resource Efficiency: Growing microgreens in a small apartment or indoor setup requires minimal resources compared to conventional farming. This resource efficiency reduces the environmental footprint of food production, making microgreens a sustainable alternative to traditional agricultural practices. The ability to grow microgreens year-round also contributes to food security and reduces the reliance on long-distance transportation of produce.
Reduced Carbon Footprint: By growing microgreens locally, you can reduce the carbon emissions associated with transporting food from farms to markets. Food deserts are regions where residents have limited access to affordable and nutritious food. Back in 2018, we lived in a small town in East Texas where healthy, affordable options were scarce. Fast food chains dominated every corner, and the local grocery store primarily offered frozen options. The farmers market didn't fare much better, selling fruits imported from Mexico with questionable freshness, and there were no locally grown produce options. It was also disheartening to see that the area was filled with health care facilities that seemed more focused on prescribing pills rather than promoting nutritional education. Microgreens could be a wonderful way to help bring healthy food to these areas since they can be grown locally in community gardens, schools, or local farms, significantly increasing access to fresh produce.
Local Production: Growing microgreens in community gardens or local farms can provide a reliable source of fresh vegetables for residents in food deserts. These initiatives can improve food security by making nutritious food more accessible to those who need it most. By involving community members in the growing process, these projects can also promote self-sufficiency and empowerment.
